Bell Peppers

Did you know that bell peppers are mostly water? Approximately 90% in fact. Bell peppers come in a variety of colors and flavors. Green bell peppers are not yet ripened, leaving a more bitter taste whereas red bell peppers are the most ripened having a much sweeter taste. Bell peppers have many nutrients, one of them being that they are a great source of Vitamin C. In fact, ½ cup of a red bell pepper contains more than 100% of your daily needs for Vitamin C. For some people, bell peppers can be hard on the stomach because of a type of natural sugar they contain called fructose. Thus, if you find bell peppers cause you trouble, keep to a ½ serving at a time. Cooked bell peppers may also be better tolerated.
