Kefir

Kefir is a fermented beverage that comes from adding kefir grains (often called cauliflower grains) to an animal milk, usually cow or goat milk. It is considered low lactose so many who experience issues with lactose often find they have no issues with drinking Kefir. This is because the natural lactic acid in kefir converts lactose into lactic acid along with other enzymes present that break down the lactose well before you even consume it, making it easier for digestion. Kefir is also jam-packed with probiotics, the good bacteria, we need to keep our gut health and immune health optimal. As you learned last week, although kefir is not completely lactose-free naturally, there are lactose-free products out there made with plant-based milks. Be aware, these products do not contain the same nutritional benefit as the original kefir. Most stores carry pre-made kefir in the refrigerator section, either near the milk or yogurt products. If you are interested in making your own, give this recipe a try! Kefir grains can be found in most stores or online.
